Trail Mix


1 cup old-fashioned oats 
Zest of 1 orange
1 cup sliced almonds 
¼ cup honey
Cooking spray
½ cup (3 ounces) raisins
½ cup (3 ounces) peanuts 
½ cup dried apricots cut into small pieces 

Preheat oven to 350°F. Combine oats, orange zest, and almonds. Spread mixture on an ungreased baking sheet; bake for 15 minutes. Remove from oven, but leave oven on.
Transfer toasted oat mixture to a large bowl, and stir in honey. Coat the baking sheet with cooking spray. Crumble the honeyoat mixture onto the sheet, and return to oven. Bake for about 10 minutes, or until golden. Allow mixture to cool, and then stir in raisins, peanuts, and apricots.
Makes 6 servings.
