Strawberry Tofu “Ice Cream”


¼ 14-ounce package firm tofu
1 cup frozen strawberries (no sugar added)
½ teaspoon vanilla extract
1 tablespoon honey or pure maple syrup
¼ to ¹⁄³ cup soy milk or low-fat milk  
¼ cup muesli 

In a food processor or blender, combine tofu, strawberries, vanilla, and honey. Blend until smooth, adding just enough milk to achieve desired consistency. Pour mixture into a serving dish, and top with muesli.
Makes 1 serving.
