Brown Basmati Rice Pilaf


1 tablespoon olive oil
½ cup diced red onion 
3 cloves garlic, minced 
2 bay leaves
2½ cups low-sodium chicken or vegetable broth 
1 cup brown basmati rice
4 green onions, sliced 

Heat oil in a large skillet over low heat. Add onion and garlic, and sauté until onion is translucent. Add bay leaves and broth, and bring to a boil. Stir in rice, lower heat, and simmer for about 45 minutes, until cooked. Remove bay leaves. Stir green onions into cooked rice mixture.
Makes 4 servings.
