Pumpkin and Quinoa Pudding


¾ cup pumpkin puree
1 teaspoon vanilla extract
2 tablespoons orange juice concentrate
1 teaspoon pumpkin pie spice 
¼ cup pure maple syrup
1 cup low-fat plain yogurt  
1½ cups cooked quinoa
¼ cup walnuts, optional 

Combine pumpkin, vanilla, orange juice concentrate, pumpkin pie spice, and maple syrup in a large bowl. Stir in yogurt, quinoa, and (optional) walnuts.
Makes 5 servings.
