Lipids


Lipids are organic compounds of different chemical structure, including fats and oils, waxes, phospholipids and steroids. Their common feature is insolubility in water, and extremely good solubility in organic solvents. The basic structure of most lipids is the triglyceride. Triglycerides provide a key calorie source for the body and are the major form of fat in foods.

The three main roles of lipids are:
  • energy Storage
  • construction of biological membranes
  • transmission of signals between cells


Types of lipids are saturated fats and unsaturated fats.

Almost all foods contain a variety of saturated and unsaturated fatty acids. Saturated fat should be limited in our diet because it can raise blood cholesterol.
